Lotus seeds are rich in nutrients, high in edible and medicinal value, and are known as “Southern Ginseng”. In addition to the common chemical components such as carbohydrates, proteins, lipids and tannins common to common plants, lotus leaves also contain lotus leaf base, original lotus leaf base, imipenem, N-demethylolaine and Rich flavonoids such as lotus root, quercetin and isoquercetin are widely used in both edible and medicinal applications. In response to the development of high-quality, green beverages in the region's rich Xianglian resources, Tsinghua University and Shandong Agricultural University, and Xiangshan Food Processing Factory in Lushan City, Hunan Province, have jointly developed and researched the "super-smash and drink of lotus leaf and lotus seeds". Production Technology, which was approved by the Ministry of Education at Tsinghua University on November 27, 2005.

This research project involves two fields of powder engineering and food engineering. It belongs to comprehensive processing technology and uses ultra-fine processing technology to develop and develop two products:

Using ultra-fine pulverization and room temperature leaching combination technology, the production technology of lotus leaf ultra-fine pulverization and lotus leaf dew drink was developed. The raw material reached the cell-level pulverization, which ensured the rapid and effective leaching of the active ingredients. The leaching was carried out at room temperature for 30 min, and the pulverization size was 300 mesh. Under the conditions, the extraction rate of flavonoids can reach 98%.
For the first time, the material was ultra-finely treated by a powerful grinding and dispersing technology with a medium. The ultra-fine pulverization of lotus seed and the production technology of lotus seed drink were developed to improve the utilization rate of raw materials. The double enzyme hydrolysis method was used to improve the starch conversion rate. The homogenization treatment is carried out by using 100MPa high-pressure jet pulverization technology to prevent precipitation of fine solid particles, reduce the amount of food additives, improve the taste of the beverage, and maintain stable product quality.

The research and development of the project is in line with the national agricultural and sideline product development industrial policy. The Hunan Provincial Industrial Development Plan has included Xianglian and its series of foods as one of the “three leading industries” developed by the province. The development of "green" Xianglian beverages such as lotus leaf and lotus leaf is not only one of the important industries supported by the state, but also necessary to meet people's growing consumer demand. As a green drink, it will have a broad development prospect.

Main Specifications

(1) The ultrafine lotus seeds have a particle size ranging from 0.29 to 76.33 μm and an average particle diameter of 11.34 μm.

(2) After the lotus leaf is ultra-fine, the effective component can be quickly and effectively leached, and the flavonoid extraction rate can reach 98% under the condition of immersion for 30 min at room temperature and 300 mesh.

(3) Lotus seed drink (Lotus Leaf) has a milky white liquid, no precipitation, slightly sweet and refreshing. The lotus leaf drink (Rose Leaf) has a bright yellow or light yellow color. It is clear and transparent, has no sedimentation, is cool and refreshing, sweet and sour, and is accompanied by refreshing mint. It has the unique fragrance and aroma of lotus leaf.
