Raw material formula: Skimmed milk 566 kg (50%), Glucose syrup 10.45 kg (10%), Aqueous solution of sodium dihydrogen phosphate (dihydrate) 300 g, Lactose crystal seed 50 g, High fat milk powder 23.9 kg.
Production Method:
1. Start by adding 60% of the skimmed milk at 40°C while continuously stirring. Then add 50% of the glucose syrup and 10% of the sodium dihydrogen phosphate solution. The mixture is passed through a tube-type heat exchanger. It is heated to 80°C and then steam is directly injected under a pressure of 0.3 MPa to raise the temperature to 120°C.
2. Next, the mixture is concentrated in a falling film evaporator until it reaches a dry matter content of 45%. After that, it's cooled down to 35°C using a tube heat exchanger. Lactose crystal seeds smaller than 2 μm are added and the mixture is kept at this temperature for 5 hours while continuously stirred. Finally, it’s cooled further to 5°C.
3. Then, high-fat milk powder containing 36% fat—previously pasteurized at 90°C for 15 seconds—is added to the suspension at 50°C. The mixture is homogenized in two stages using a two-step homogenizer at pressures of 10 MPa and 2 MPa, respectively. After homogenization, the product is cooled to 5°C.
4. The final mixture, which contains 45% dry matter, is sprayed into a drying tower under a pressure of 7.5 megapascals. Hot air at 350°C and a flow rate of 0.016 megapascals is passed through the tower. The exiting air has a temperature of 85°C and a relative humidity of 15%. The finished milk powder is collected from the bottom of the tower.
Product Features: The moisture content is 2.5%, the specific gravity exceeds 500 g/L, the fat content is 24.8%, with 79% of it in free form, and the lactose particles range in size from 10 to 70 microns. This process ensures a high-quality, consistent, and stable milk powder suitable for various food applications.
