Raw material formula: Skimmed milk 566 kg (50%), Glucose syrup 10.45 kg (10%), Aqueous solution of sodium dihydrogen phosphate (dihydrate) 300 g, Lactose crystal seed 50 g, High fat milk powder 23.9 kg.
Production Method:
1. Start by adding 60% of the skimmed milk at 40°C while continuously stirring. Then add 50% of the glucose syrup and 10% of the sodium dihydrogen phosphate (dihydrate) solution. The mixture is passed through a tube-type heat exchanger. The system is heated to 80°C, and steam is introduced at 0.3 MPa to raise the temperature to 120°C.
2. After heating, the mixture is concentrated in a falling film evaporator until it reaches a dry mass content at 45°C. It is then cooled to 35°C using a tube heat exchanger. Lactose crystal seeds smaller than 2 μm are added, and the mixture is kept at that temperature for 5 hours with continuous stirring. Afterward, it is cooled down to 5°C.
3. Next, high-fat milk powder containing 36% fat—previously pasteurized at 90°C for 15 seconds—is added to the suspension at 50°C. The mixture is homogenized in a two-step homogenizer at pressures of 10 MPa and 2 MPa, respectively. It is then cooled to 5°C.
4. The final mixture, containing 45% dry matter, is sprayed under a pressure of 7.5 MPa into a drying tower. A hot air stream at 350°C and 0.016 MPa flows through the tower. The exiting air has a temperature of 85°C and a relative humidity of 15%. The dried milk powder is collected from the bottom of the tower.
Product Features: The finished product has a moisture content of 2.5%, a specific gravity greater than 500 g/L, a fat content of 24.8%, of which 79% is in the free state, and lactose particles ranging from 10 to 70 microns in size. This process ensures a high-quality, consistent, and stable dairy powder suitable for various food applications.
