Secondly, when preparing fresh tender cowpeas for drying, their delicate texture must be preserved. To do this, briefly blanch them in boiling water for approximately 2 to 4 minutes, then quickly cool them in cold water. This step stops the cooking process and prevents any residual heat from affecting the texture. Additionally, this method helps remove any sticky residues naturally exuded by the beans. Thirdly, during the blanching stage, adding 0.5% sodium bicarbonate to the water can help retain the vibrant green color of the cowpeas and enhance the visual appeal of the dried product. Fourthly, sulfur fumigation is an essential step in preserving the quality of dried cowpeas. After blanching, spread the beans on bamboo mats indoors and burn 200 grams of sulfur per cubic meter to inhibit oxidation and prevent mold growth. This not only reduces the loss of vitamin C but also accelerates the drying process and improves the rehydration properties of the dried beans. Fifthly, while natural drying might be influenced by unpredictable weather conditions, it's recommended to use controlled artificial drying methods, especially for larger-scale production. Alternatively, designing specialized drying barns can optimize efficiency and output. Lastly, when storing dried cowpeas, it's crucial to prevent moisture-related spoilage. Use polyethylene plastic bags to create large, sealed packages, each containing around 20 kilograms. Proper storage ensures the beans remain fresh for up to two years. For commercial purposes, grading and shaping the beans during drying facilitates organized packaging and enhances market appeal. In summary, the drying process of cowpeas involves careful selection, proper preparation, and effective preservation techniques to ensure both quality and longevity.
